Spinach Curry

Yummy Indian dish. I used to eat this on top of toast but not as big a fan of that anymore, and have just been eating by itself lately. I did take it to a potluck a few weeks ago where people were eating it as a dip with tortilla chips and they seemed to enjoy that!


Recipe (hopefully this isn’t a family secret!):

1 onion chopped, 1 bag baby spinach, 1 tomato chopped, 1 tsp garlic, 1 tsp turmeric, 2 tsp cumin, 1 tsp salt, 2 tsp corriander powder, 1/2 tsp red chile powder

put onions in pot on stove and kind of sautee them with some oil (stove on high)
once they are browning, add the spinach a bit at a time until it all kind of mixes in and gets really small (might want to turn stove down to medium)
keep cooking until most of water from spinach gone
then add all the spices, garlic
then add the tomatoes
keep cooking it all on the stove and stirring it with a wooden spoon until it kind of all blends together.
