Finally got back into the cooking after one too many pizza pockets over the last month which has been crazy with school, work, etc.
Guacamole made with salt, avocado, lime juice (normally would use lemon but didn’t have any) and chopped onions.
Then sautéed some shrimp with chopped up garlic and butter (after thawing and de-shelling the shrimp)
Next fried some onions and peppers in the leftover spices in the pan.
Then spread some pesto on a tortilla and piled everything on top – cheese, shrimp, onions and peppers. Covered with another tortilla and fried up in the pan, served with guacamole and hot sauce on the side.
Also made a second one with pizza sauce, cheese and salami 🙂
